Sausage & Pepperoni Pizza Casserole

Makes: 6 servings Active Time: 10 minutes Total Time: 40 minutes

Ingredients

  • 1 pound ground hot or mild Italian sausage
  • 2 cups shredded mozzarella cheese, divided
  • 1½ cups grated Parmesan cheese, divided
  • 1 (28 ounce) can crushed tomatoes
  • 5 tablespoons Marinara Sauce Mix, divided
  • 1½ ounces pepperoni slices, from a 3.5 ounce package
  • 1 cup Pancake & Waffle Mix
  • 1 cup whole milk ricotta cheese
  • ½ cup milk
  • 2 large eggs

Directions

  1. Preheat oven to 400°F. In a greased 13×9-inch baking pan, loosely press raw sausage into a thin layer in the bottom of pan. Sprinkle with 1 cup mozzarella cheese and ½ cup Parmesan cheese.
  2. In medium bowl, combine crushed tomatoes and 4 tablespoons Mama Mia™ Marinara Sauce Mix. Spread over cheese layer. Top with pepperoni.
  3. In another medium bowl, whisk together Batter Up! Pancake & Waffle™ Mix, ricotta cheese, milk, eggs, remaining 1 cup Parmesan cheese and remaining 1 tablespoon Mama Mia™ Marinara Sauce Mix. Pour over pepperoni. Top with remaining 1 cup mozzarella cheese.
  4. Bake 30 minutes or until knife inserted in center comes out clean.
  • Makes 6 servings.
  • Make Ahead & Freeze: Prepare through step 3. Cover with plastic wrap and then aluminum foil. Seal well, label and freeze. Preheat oven to 400°F. Remove foil and plastic wrap from pan. Replace foil. Bake from frozen for 20 minutes. Remove foil and continue baking 30 – 35 minutes or until knife inserted in center comes out clean.
