Ranch Chicken Wild Rice Soup

Makes: 6 servings Active Time: 15 minutes Total Time: 1 hour

Ingredients

  • 2 tablespoons olive oil
  • 1½ pounds boneless skinless chicken breasts, cubed
  • 1 cup chopped carrots
  • 2 tablespoons Onion Seasoning
  • 5 cups hot water
  • 1 package Creamy Wild Rice Soup Mix
  • 1 cup heavy whipping cream
  • 2 tablespoons Classic Ranch Mix

Directions

  1. In large saucepan or Dutch oven, heat oil over medium-high heat. Add chicken, carrots and Onion Onion™  Seasoning. Sauté 5-7 minutes.
  2. Whisk in hot water and Creamy Wild Rice Soup Mix. Bring to a simmer. Reduce heat and simmer 30 minutes, stirring occasionally.
  3. Stir in cream and Classic Ranch Mix. Continue simmering 15 minutes.
  4. Makes 6 servings.
  • Make Ahead & Freeze: Place step 1 ingredients in a quart freezer bag. Place step 3 ingredients in a quart freezer bag. Place both bags and unopened Creamy Wild Rice Soup Mix package in a gallon freezer bag. Seal well, label and freeze. Thaw completely. Continue with step 1.
