BBQ Chicken Quesadilla

Ingredients

  • ¾ cup sour cream
  • 3 tablespoons Taco Seasoning, divided
  • 1 tablespoon olive oil
  • 1½ pounds boneless skinless chicken breasts, sliced into strips
  • 1 large onion, sliced into strips
  • â…“ cup BBQ Sauce
  • 6 (8-inch) burrito-style flour tortillas
  • 2 cups shredded Monterey Jack cheese
  • ½ pound bacon slices, cooked and crumbled, optional

Directions

  1. In a small bowl, combine sour cream with 1 tablespoon Mom’s Favorite Taco Seasoning. Mix well. Refrigerate until ready to serve.
  2. Heat oil in large skillet or grill pan over medium-high heat. Add chicken, onion and remaining 2 tablespoons Mom’s Favorite Taco Seasoning. Sauté, stirring occasionally, until cooked through, about 8-10 minutes. Remove from heat and stir in Smoky Bacon BBQ Sauce.
  3. Divide 1 cup of cheese among tortillas, placing on one half. Top with chicken mixture, bacon, if desired, and remaining 1 cup cheese. Fold in half.
  4. Wipe out skillet or grill pan. Over medium-heat, cook 1-2 quesadillas until lightly browned on both sides and cheese melts, about 2-3 minutes. Continue with remaining quesadillas. Slice into wedges. Serve with seasoned sour cream.
  • Makes 6 servings. 
  • Make Ahead & Freeze:Place chicken, onion and 2 tablespoons Mom’s Favorite Taco Seasoning in a gallon freezer bag. Place Smoky Bacon BBQ Sauce in a quart freezer bag. Place tortillas in a gallon freezer bag. Place cheese in a quart freezer bag. Place bacon, if desired, in a quart freezer bag. Place all bags in a gallon freezer bag. Seal well, label and freeze. Thaw completely. Continue with step 1.
