Cranberry Orange Streusel Tiny Cakes

Makes: 16 servings Active Time: 15 minutes Total Time: 45 minutes

Ingredients

  • Silicone Bar Pan
  • 1 (8 ounce) package cream cheese, softened
  • 1 package Cranberry Orange Cake Mix
  • 6 tablespoons butter, melted
  • ¾ cup water
  • 2 large eggs, beaten
  • ¼ cup light brown sugar
  • ¼ cup chopped pecans

Directions

  1. Preheat oven to 350°F. Place Silicone Bar Pan on a baking sheet. Set aside.
  2. In small bowl, combine cream cheese and Cranberry Orange Cake Mix packet 2. Vigorously mix until well combined. Set aside.
  3. In large bowl, combine Cranberry Orange Cake Mix packet 1 and butter; mix until small crumbles form. Remove ¼ cup and place in a small bowl; set aside. Add water and eggs to remaining crumbles; stir to combine. Batter will be lumpy.
  4. Divide batter among wells of Silicone Bar Pan. Dollop with cream cheese mixture, pressing down into batter. Add sugar and pecans to reserved crumbles. Sprinkle over batter (wells will be very full).
  5. Bake 25-30 minutes or until toothpick inserted in the cake (not cream cheese) comes out clean.
  • Makes 16 cakes.
